I'm always minding a large bubbling pot, Chili Con Carne or Ragu au Bolognaise usually.
I adore anything I can just throw in a slow cooker and forget about, only to find that it's better for it.
Though if you can prod me awake on a weekend my roast dinners are competitive.
Goose fat really isn't just a meme, but I actually think lard is underrated.

Another slow cooker great; I put red wine in mine, but I'm told it's wrong to Frenchify it so.

I like making curries, home made soup and a greek dish called Kleftiko in my slow cooker. I have made a belgian stew called stoofvles before but I havnt quite mastered it.

Goulash, chilli and bolognese are my three go-to recipes. Also smash out a Thai red or green curry and a good, old-fashioned roast from time to time.

I've been using Hello Fresh which is a meal delivery service. You get all the ingredients you need for each dish and a recipe card, so I'm increasing my repertoire daily. It's a little expensive after the initial deal, but it's super convenient.

Goulash is fairly simple, great stuff and easy, tomato, onion and garlic and peppers type base, heavily flavored with Paprika
@WalterLuigi Gumbo sounds intimidating on paper, I took an introductory class in French cooking years ago and we learned to make something based in a roux, which frankly, is fairly involved for a base sauce, what with the constant stirring on a low heat, but it's also got those Afro-Carribean ingredients that I wouldn't know what to do with, do you make shellfish gumbo? I never cared for seafood, but I also see some people do poultry, which I can dig.

@Siren: When you coming to the states? Lol. Gumbo is amazing, one of my favorite dishes.

@Scuffed: It's honestly not that bad, but the roux does take some minding for sure. Don't stir it enough, have the heat too high, etc and you end up burning it. It takes patience because you want it to reach a nice chocolate brown color. But the actual process is easy, just mix oil and flour, then keep stirring until it's done. Then stir in your stock slowly so that it doesn't cause the roux to clump up.

I will make shellfish gumbo, but it doesn't keep as long. Usually I slice up some andouille and brown it in a pan, use red cooking wine to deglaze and dump it in the pot. Grill/smoke some chicken, dice it up and toss it in the pot, and can't forget my veggies. I make some rice on the side and serve the gumbo on rice.

I tend to cook it in bulk and put most up in the freezer to thaw out as needed. Once done, I keep it in a slowcooker so it'll stay warm. Or I might move it over once the roux is done and let it finish that way.

@Scuffed: Why is it blasphemous? Yeah, this part of the US is heavily french in origin so lots of the food has french influences. Etouffe and such is common

The casings are traditionally fabricated from the "Lower" intestinal tract, which is something we don't do as a rule, as it imparts a sort of *ahem* "fruity" flavour.
I imagine there are artificial casings for that now, but I believe the sausage were declined before such an innovation.
And besides, as we understood it, the lower intestinal tract thing were something of the distinguishing nature of the article.
My grandad would be the man to ask; bugger eats snails and raw mussels off the rocks, and the legs offa froggies, and he's an obligate francophile, so he'd probably have the best narrative for the traditional English distaste for Andouilles.

They are good for the grill, I'll grant you, and they fit well on a bun.
But for me, there's just summat about dem links.

Thanks Neon, that looks dank and brilliantly simple!
I think I might bodge some together actually, I have most of the ingredients to hand.
Do you think German Frikadeller would work? Meatballs is meatballs I reckon, but I'm more a practical cook than a pure traditionalist.

Oldschool lemonade (and Lemon-Limeade) is fire actually.
You can also add ginger root if you like it.
The health nuts love it, but I just think it's nice.
Just steep dem sliced citruses in boiling water and add a sensible amount of sugar.
I should keep a jug of that in the fridge, sometimes it's good for me to stop drinking tea all the time.
It's full of tannins that stain me teeth and has more caffeine than you might suspect.
